Tuna croquettes with vegetables

Ingredients
Tuna croquettes
- 2 cans of tuna, 140gr. each
- 1 egg
- 1/2 cup oat bran
- 1/4 yellow onion, finely chopped
- 1 tsp garlic, finely chopped
- 1/2 cup celery, chopped
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- 1 tbsp Dijon mustard
- Avocado oil, for frying
- Salt and pepper, to taste
Yogurt dip
- 1/2 cup Greek yogurt
- 1 tsp chipotle adobo
- Lemon juice, to taste
- Paprika, to taste
- Salt, to taste
Instructions
- Drain the tuna and place in a large bowl.
- Finely chop herbs, celery, onion and garlic.
- Add to the bowl and mix.
- Stir in the egg, oat bran and season to taste with salt and pepper. You can add a spicy touch with dried chili if you wish.
- If you still can't form into croquettes, add more bran if needed.
- Take a heaping tablespoon of the mixture and form into flattened croquettes.
- Cook either in the oven, air fryer or in oil on the stove until crispy. I cook in olive oil for about 3 to 4 minutes per side or until crispy. Place on paper towels and enjoy.
- For the dip mix all the ingredients, if you want it spicy add hot paprika to taste and serve with the croquettes.
