Empanadas can be filled with an endless variety of fillings – try our sweet and savory chard filling, or invent your own with whatever you find in your fridge. Recipe adapted from Chef JC Gibbs’ entry in the James Beard Foundation’s “More Taste, Less Waste” competition. Ingredients

Oat Dough:

  • 3 cups flour (750 ml)
  • 1 1/4 cups quick oats (310 ml)
  • 2 tsp salt (10 ml)
  • 1 Tbsp turmeric (15 ml)
  • 1/2 cup butter cold (125 ml)
  • 1 egg
  • 1/2 cup olive oil (125 ml)

Chard and Cranberry Filling:

  • 1 Tbsp olive oil (15 ml)
  • 1/2 onion diced
  • 2 bunches Swiss chard rinsed and shaken dry
  • 1 cup carrot grated (250 ml)
  • salt to taste
  • freshly ground black pepper to taste
  • 1/4 cup cranberries dried (60 ml)
  • 2 oz goat cheese soft (70 grams)
