Steel-Cut Oatmeal Granola

Ingredients
- 250 gr. steel-cut oats
- 2 tbsp. coconut oil
- ¼ cup. Maple syrup
- 2 tbsp. peanut butter
- 3 tbsp. slivered almonds
- 3 tbsp. pumpkin seeds
- 4 tbsp. shredded coconut
- 4 tbsp. pecan nuts
- 2 tbsp. Cinnamon
- 1 tsp. Vanilla Extract
- 2 tsp. salt
- ⅓ cup. Raisins or dried cranberries
Instructions
- In a deep bowl or bowl mix the liquid ingredients: the coconut oil, peanut butter, maple syrup and vanilla.
- Add the rest of the ingredients except the raisins or cranberries.
- Spread the mixture on a baking sheet covered with waxed paper.
- Bake in a preheated oven at 150°C (350°F).
- Bake for approximately 30 to 40 minutes, stirring every 10 minutes. Remove from oven when lightly browned.
- Add the raisins or cranberries once cooled.

Notes
- You can add different nuts or seeds: dried strawberries, apricots, flaxseed or chia are excellent choices.
- Serve with yogurt, milk or whatever you like.
- Store in a jar or sealed container.
