Sweet oatmeal pizza
Imagine a combination of hot cake or large pancake with yogurt and your favorite toppings. This recipe works as breakfast, snack or dinner and is loved by kids and grown-ups alike.

Ingredients
Oatmeal pizza:
- ½ cup rolled oats
- 1 egg
- 2 tablespoons milk your favorite
- 1 teaspoon monk fruit
- ½ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- 1 teaspoon butter
Topping:
- 2 tablespoons Greek yogurt
- 1 tablespoon almond or peanut butter
- Fruit to taste (mango, kiwi, raspberries)
- Cocoa nibs to taste
- Ground cinnamon to taste
Instructions
- Blend the oats.
- Preheat a small frying pan.
- Mix the ground oats in a bowl and incorporate all the ingredients, egg, milk, monk fruit, baking powder and cinnamon. Taste and decide if you want it sweeter.
- Grease the hot pan with the butter and coat the bottom well.
- Pour all the mixture and spread it in the pan.
- Cover and cook for 2 minutes or until cooked well. Turn around and cook 1 minute more.
- Remove from skillet and decorate. First with the Greek yogurt, then the peanut butter and finish with the chopped fruit and a touch of cinnamon or cocoa nibs at the end.
