Sweet oatmeal pizza

Imagine a combination of hot cake or large pancake with yogurt and your favorite toppings. This recipe works as breakfast, snack or dinner and is loved by kids and grown-ups alike.

Ingredients

Oatmeal pizza:

  • ½ cup rolled oats
  • 1 egg
  • 2 tablespoons milk your favorite
  • 1 teaspoon monk fruit
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon butter

Topping:

  • 2 tablespoons Greek yogurt
  • 1 tablespoon almond or peanut butter
  • Fruit to taste (mango, kiwi, raspberries)
  • Cocoa nibs to taste
  • Ground cinnamon to taste

Instructions

  • Blend the oats.
  • Preheat a small frying pan.
  • Mix the ground oats in a bowl and incorporate all the ingredients, egg, milk, monk fruit, baking powder and cinnamon. Taste and decide if you want it sweeter.
  • Grease the hot pan with the butter and coat the bottom well.
  • Pour all the mixture and spread it in the pan.
  • Cover and cook for 2 minutes or until cooked well. Turn around and cook 1 minute more.
  • Remove from skillet and decorate. First with the Greek yogurt, then the peanut butter and finish with the chopped fruit and a touch of cinnamon or cocoa nibs at the end.
