Apple Pie and Oatmeal Bars

I present to you one of my new favorite desserts of the season. In my house, they lasted only 1 day, and my 3-year-old son couldn’t stop eating them, he loved them! 

It is a different version of apple pie but in bars and with a delicious dough of peanut or almond cream with a mixture of oatmeal and almond flour. They are delicious on their own, with icing sugar or even with a little ice cream. 

APPLE PIE AND OATMEAL BARS

Ingredients

Base of pie

  • 1/2 cup almond or natural peanut butter 
  • 1/4 cup coconut oil or avocado oil 
  • 1/4 cup maple syrup 
  • 1 teaspoon vanilla 
  • 11/2 cups oat flour 
  • 11/2 cups almond flour
  • 1 teaspoon baking powder 
  • 1/4 teaspoon salt
  • 1/4 cup walnut, chopped 

Apple filling

  • 4 cups apple peeled and cubed 
  • 3 tablespoons maple syrup 
  • 3 tablespoons orange juice 
  • 1 tablespoon cornstarch 
  • 11/2 teaspoon ground cinnamon 
  • 1 teaspoon coconut oil 

Instructions

  • Preheat the oven to 180ºC. 
  • Grease a 9 x 13-inch rectangular pan or cover with parchment paper, I like it better with parchment paper to make the bars easier to remove. 
  • In a bowl mix the wet ingredients of the base: the peanut or almond butter, the oil, maple syrup and vanilla. Add the almond flour, oatmeal, baking powder, salt and mix very well until there are no unmixed pieces of flour. 
  • Divide the mixture into 3 and take 2 of the parts to cover the bottom of the mold, spreading very well. 
  • In a skillet over medium heat mix the oil with the apples and cinnamon. Add the orange juice, maple syrup, and cornstarch. Mix very well until there are no lumps and cover the pan. 
  • Cook 5 minutes over medium low heat, stirring occasionally to soften the apple a little. 
  • Pour over base and spread well. 
  • Add the chopped walnut to the mixture of the pie base that you had reserved and with your hands separate. We are going to use this as a topping or spread over all the apples and take to the oven. 
  • Bake for 30 minutes or until golden. 
  • Let stand for at least 1 hour before cutting or else all the squares will break. 
  • You can serve with a scoop of ice cream, a little icing sugar or enjoy alone. 
  • Enjoy that same day and keep what you have left in the refrigerator
