
Pumpkin and Oatmeal Pie

For the crust:
- Preheat the oven to 180°C (350°F).
- Prepare the crust in a bowl, mix the oat flour, cornstarch and salt. Add the cold butter in pieces and mix with your fingers or a pastry cutter until you get a sandy mixture.
- Stir in the maple syrup and mix.
- Add the water, one tablespoon at a time, until the dough is easily compacted.
- Form a ball and roll out on a floured surface. Place the dough in a pie pan and press to cover the base and edges. Set aside
For the filling:
- Mix the pumpkin puree, eggs, maple syrup, brown sugar, oat milk and vanilla. Add the spices: cinnamon, nutmeg, ginger, cloves and salt. Mix well until everything is integrated.
- Pour the pumpkin mixture over the prepared crust and smooth the surface with a spatula.
- Bake the pie for 40-45 minutes, or until the filling is firm and a toothpick inserted comes out clean.
- Cool completely before serving.

Notes
- For a crispier crust, you can bake it for 10 minutes before adding the filling.
- Serve with whipped cream or a scoop of ice cream if desired.
