Double Chocolate Peanut Butter Granola Bars

Ingredients
  

  • 1 cup unsalted nuts and or seeds
  • cups fresh soft dates
  • ¾ cup quick or rolled oats
  • 2 tbsp sweetened or unsweetened coconut
  • 2 tbsp cocoa powder
  • 2 tsp vanilla
  • ¼ tsp salt
  • ¾ cup peanut butter or alternative
  • 2 tbsp chocolate chips

Instructions
 

  1. Pulse nuts and seeds in a food processor until crumbly.
  2. Add dates, oats, coconut, cocoa powder, vanilla, salt and peanut butter.
  3. Blend until the mixture comes together.
  4. Transfer to a 9 x 9 inch pan and press firmly with damp hands.
  5. Sprinkle chocolate chips on top and press them in.
  6. Refrigerate for 30 minutes before cutting into bars.
