Pumpkin puree is canned but you can make it at home by roasting pumpkins and mashing them if you can’t find cans of puree at the grocery store.

Portions: 6 Waffles
Ingrédients
- 3/4 Cup Oatmeal
- 1/2 Cup Wheat Flour
- 1/2 Tablespoon Baking Powder
- 1 Pinch of Salt
- 1 Teaspoon Pumpkin Spice
- 2 Eggs
- 1/2 Cup Milk (Your Favourite)
- 50 gr Unsalted Butter, Melted
- 2 Tablespoons Maple Syrup
- 1/4 Cup Pumpkin Puree
- 1 Teaspoon Vanilla
Instructions
- Mix the wet ingredients in a large bowl: the eggs, milk, melted butter, maple syrup, pumpkin puree and vanilla. They are not very sweet so you can serve with maple syrup, if you want them sweeter add more sweetener to taste.
- Add the oatmeal, wheat flour, baking powder, salt, and pumpkin spice. Mix well with a spoon without over mixing and let it rest for 5 minutes before using the mixture so that the oats absorb a little of the liquid and are fluffy.
- Meanwhile heat your waffle iron. Once the 5 minutes have passed, mix the waffle mix once more (it will be thick it’s normal) and grease the waffle iron.
- Add a few tablespoons of the mixture in the center of each waffle without reaching the edges and close. Cook until crisp and golden, the total time depends entirely on each waffle iron and the size of the waffles. Mine take about 5 minutes to be done and crisp. Do not put them on top of each other while you prepare the others or they will soften with the steam that comes out of each one. You can keep warm in a preheated oven at 100ºC in what you follow with the other waffles.
- Serve with maple syrup and walnut to taste, or whatever you want.
Notes
Pumpkin puree: Pumpkin puree is cooked pumpkin or pumpkin puree, I used from a can but you can easily make it at home. Here is the recipe for you to do it
Pumpkin spice: I used my homemade pumpkin spice mix, here you can see the easy recipe to make it at home
Milk: I used almond milk because it is what we consume at home, but you can use your favorite milk.
