Italian Chicken & Veggie Meatballs

Ingredients
  

  • 1 lb ground chicken
  • 1 cup shredded zucchini pressed to remove excess moisture
  • ½ cup quick cooking oats
  • ½ cup ricotta
  • ¼ cup sun-dried tomatoes packed in oil finely chopped
  • 1 tbsp dried parsley OR ¼ cup chopped fresh parsley
  • 1 tsp basil
  • 1 tsp fennel
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp freshly ground black pepper

Instructions
 

  1. Preheat the oven to 400°F
  2. Combine all ingredients in a large bowl and mix until well-combined.
  3. Shape into 22-26 meatballs and place on a parchment lined baking sheet.
  4. Bake in the preheated oven for 15-18 minutes or until the internal temperature reaches 165°F.
