Oat Caramel Sauce (Vegan)

Ingredients
  

  • ¾ cup coconut sugar muscovado or brown sugar
  • ½ cup oat milk
  • 1/2 cup canned coconut milk the thick, white part
  • ¼ teaspoon coarse sea salt
  • 2 tbsp oat flour to thicken and add creaminess

Instructions
 

  1. In a medium saucepan, combine the sugar, coconut milk, oat milk and salt.
  2. Cook over medium heat, stirring constantly, until the sugar is completely dissolved.
  3. Add the oat flour gradually, whisking with a hand whisk to prevent lumps.
  4. Bring to a gentle boil and reduce heat to low. Cook for 10 to 12 minutes, or until the sauce thickens and has a caramel consistency.
  5. Remove from heat and let stand for a few minutes; the sauce will continue to thicken as it cools.
  6. Serve warm over fruit, ice cream, pancakes, or even in coffee.

  • Store in an airtight jar in the refrigerator for up to 1 week; when reheating, add a teaspoon of plant-based milk if it is too thick.
