Oat Milk Chocolate Pudding

Ingredients
  

  • 2 cups of unsweetened oat milk
  • 3 tbsp unsweetened cocoa powder
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • tsp agar-agar powder / vegan gelatine

Instructions
 

  1. In a Saucepan off heat combine agar-agar powder, cocoa powder and brown sugar.
  2. Add oat milk gradually whisk until the mixture is smooth and lump-free.
  3. Place the saucepan on medium heat. Stir constantly and bring the mixture to a rolling boil.
  4. Let it boil for 1–2 minutes while whisking continuously — this helps activate the agar-agar fully.
  5. Turn off the heat and stir in vanilla extract and salt. Mix until smooth.
  6. Lightly grease a silicone loaf dish / mold
  7. Pour the mixture into silicone mould
  8. Allow it to cool to room temperature, then refrigerate for 1–2 hours until fully firm.
  9. Once set, remove and slice with a sharp knife. You can dust with cocoa powder or top with berries or a drizzle of melted chocolate.
