Pears Stuffed with Oats and Walnuts

Baked pears stuffed with a golden oat and walnut crumble, finished with creamy mascarpone and a drizzle of honey. Simple ingredients, elevated into something truly comforting.

Ingredients
  

  • 4 large firm but ripe pears (Bartlett or Anjou)
  • ¼ cup traditional oats
  • ¼ cup mixed nuts pecans, walnuts, pumpkin seeds, sunflower seeds, etc.
  • 1 tbsp brown sugar
  • ½ teaspoon ground cinnamon
  • 1 pinch of salt
  • 2 tbsp melted butter
For the topping:
  • 115 g mascarpone cheese
  • 2 tbsp honey

Instructions
 

  1. Preheat the oven to 180 °C.
  2. Cut the pears in half lengthwise. Remove the seeds with a spoon, forming a small hollow in the center.
  3. Place the pears on a baking tray with the cut side facing upwards.
  4. In a small bowl, mix together the oats, walnuts, brown sugar, cinnamon and salt. Add the melted butter and stir well until the mixture forms small clumps.
  5. Fill the center of each pear with approximately 1 tablespoon of the oatmeal and walnut mixture.
  6. Bake for 30 minutes, or until the pears are tender and the oat topping is lightly browned.
  7. Remove from the oven and serve warm, accompanied by a spoonful of mascarpone and a drizzle of honey over each pear.

Notes

  • You can substitute Greek yoghurt or ricotta cheese for the mascarpone for a lighter version. 
  • If you prefer vegan, use vegetable margarine and substitute coconut yoghurt for mascarpone, as well as replacing honey with agave or maple syrup. 
  • Adding a little orange or lemon zest to the oat mixture gives it a fresh touch.
