Chocolate Pumpkin Seed Oat Energy Bites

Power up with whole-grain oats, pumpkin seed butter, pumpkin seeds, and chia! These bites deliver energy, protein, and fibre to help you crush cravings and manage munchies. If you don’t have pumpkin seed butter, you can swap in natural peanut butter or almond butter.

Ingredients

  • 11/4 cup 300 mL large-flake rolled oats
  • 2/3 cup 150 mL pumpkin seed butter
  • 1/3 cup 75 mL honey
  • 1/4 cup 60 mL medium unsweetened coconut
  • flakes plus more for rolling (optional)
  • 1/4 cup 60 mL cocoa powder
  • 1/4 cup 60 mL pumpkin seeds, finely chopped
  • 2 tbsp 30 mL chia seeds
  • 1 tsp 5 mL vanilla extract
  • 1/4 tsp 1 mL salt

Instructions

  • In a medium bowl, stir all ingredients together with a wooden spoon until combined.
  • With damp hands, mix together completely.
  • Scoop out a tablespoon of mixture and form into a ball. Repeat with remaining mixture.
  • Roll each ball in coconut flakes if desired.
  • Store energy bites in an airtight container in the refrigerator for up to 1 week.

Energy bar option:

  • Energy Bar Option: Firmly press mixture into a parchment-lined 8×8-inch baking pan. Cover and chill for one hour, then slice into bars.
