Easy High-Protein Pancakes with Oats

Ingredients
  

  • 2 cups large-flake oats
  • 1 cup cottage cheese
  • 1/3 cup milk
  • 2 eggs
  • 2 tbsp maple syrup
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions
 

  1. Place all ingredients in a blender. Purée until well combined, stopping to stir if mixture is not combining easily. Set aside for 10 minutes.
  2. Preheat a large non-stick frying pan over medium heat, then lightly grease.
  3. Pour 1⁄4 cup (60 mL)batter into the pan, leaving space for pancakes to expand (don’t overcrowd). Pour in another 1⁄4 cup (60 mL) per pancake. Cook until the bottoms are golden and edges are slightly dry, about 2 minutes. Flip pancakes and cook until puffed and golden, about 1 to 2 minutes. Transfer pancakes to plates or a wire rack.
  4. Repeat with remaining batter, lightly greasing the pan as needed.
  5. Enjoy pancakes warm with toppings of your choice, such as sautéed apple slices or local berries.
