
Easy High-Protein Pancakes with Oats

Ingredients
- 2 cups large-flake oats
- 1 cup cottage cheese
- 1/3 cup milk
- 2 eggs
- 2 tbsp maple syrup
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Place all ingredients in a blender. Purée until well combined, stopping to stir if mixture is not combining easily. Set aside for 10 minutes.
- Preheat a large non-stick frying pan over medium heat, then lightly grease.
- Pour 1⁄4 cup (60 mL)batter into the pan, leaving space for pancakes to expand (don’t overcrowd). Pour in another 1⁄4 cup (60 mL) per pancake. Cook until the bottoms are golden and edges are slightly dry, about 2 minutes. Flip pancakes and cook until puffed and golden, about 1 to 2 minutes. Transfer pancakes to plates or a wire rack.
- Repeat with remaining batter, lightly greasing the pan as needed.
- Enjoy pancakes warm with toppings of your choice, such as sautéed apple slices or local berries.
