In a large bowl, mix the oat flour, cornstarch, salt and xanthan gum.
Make a hole in the center of the dry ingredients and add the eggs, olive oil.
With a fork or your hands, start mixing the ingredients from the center outwards until the dough begins to form.
Transfer the dough to a lightly floured work surface and knead for a few minutes until a smooth and elastic dough is obtained.
Divide the dough into smaller portions and with a rolling pin, roll out each portion into a thin sheet.
Cut the pasta into the desired shape. You can make farfalle, tagliatelle, etc.
Boil plenty of water in a large pot with salt.
When the water is boiling, add the pasta and cook for a few minutes until al dente.
Drain the pasta and serve with your favorite sauce.
