Oat Pasta

Ingredients
  

  • 200 gr. Oat flour
  • 80 gr. corn starch
  • 5 gr. Xanthan gum * optional
  • 1 tablespoon olive oil
  • 2 Eggs
  • ¼ tsp. salt

Instructions
 

  1. In a large bowl, mix the oat flour, cornstarch, salt and xanthan gum.
  2. Make a hole in the center of the dry ingredients and add the eggs, olive oil.
  3. With a fork or your hands, start mixing the ingredients from the center outwards until the dough begins to form.
  4. Transfer the dough to a lightly floured work surface and knead for a few minutes until a smooth and elastic dough is obtained.
  5. Divide the dough into smaller portions and with a rolling pin, roll out each portion into a thin sheet.
  6. Cut the pasta into the desired shape. You can make farfalle, tagliatelle, etc.
  7. Boil plenty of water in a large pot with salt.
  8. When the water is boiling, add the pasta and cook for a few minutes until al dente.
  9. Drain the pasta and serve with your favorite sauce.

Notes

  • Try to maintain a uniform thickness when rolling out and cutting the dough for even cooking.
  • Experiment with different cuts and shapes of pasta. In addition to traditional noodles, you can try making ravioli, tortellini, or any other shape you like.
  • If the dough is too dry, add a bit more water; if it is too wet, add a little more oat flour.
