Creamed Corn and Oatmeal

Servings: 4 portions


For the creamed corn and oatmeal:

  • 2 cups of yellow corn
  • ½ pc. sliced onion
  • 3 cloves of garlic
  • 2 pcs. Carrot
  • 2 cups Vegetable or chicken broth
  • 1 ½ cups Oat milk
  • ¼ cup Oatmeal
  • Salt to taste
  • Pepper to taste

To serve:

  • Manchego cheese cubes or fresh cheese
  • Corn kernels
  • Cilantro or chives
  • Oat flakes


  • Sauté the onions in a little oil.
  • Add the carrots and garlic and sauté for a couple more minutes.
  • Add the corn kernels, oats and season with salt and pepper.
  • Stir in the vegetable broth and milk, bring to a boil and cook over medium heat for about 10 minutes.
  • Process with a food processor or blend the soup until a homogeneous mixture is obtained.
  • Return to the saucepan and bring to a boil, if necessary add salt and pepper.
  • Serve with cheese cubes, corn kernels and finely chopped cilantro or chives.



  • For a vegan version use a vegan cheese in your recipe.
  • You can add different spices to give it a unique and original flavor; use paprika, cumin or any other spice that is your favorite.
