Tuna croquettes with vegetables

Ingredients

Tuna croquettes

  • 2 cans of tuna, 140gr. each
  • 1 egg
  • 1/2 cup oat bran
  • 1/4 yellow onion, finely chopped
  • 1 tsp garlic, finely chopped
  • 1/2 cup celery, chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1 tbsp Dijon mustard
  • Avocado oil, for frying
  • Salt and pepper, to taste

Yogurt dip

  • 1/2 cup Greek yogurt
  • 1 tsp chipotle adobo
  • Lemon juice, to taste
  • Paprika, to taste
  • Salt, to taste

Instructions

  • Drain the tuna and place in a large bowl.
  • Finely chop herbs, celery, onion and garlic.
  • Add to the bowl and mix.
  • Stir in the egg, oat bran and season to taste with salt and pepper. You can add a spicy touch with dried chili if you wish.
  • If you still can't form into croquettes, add more bran if needed.
  • Take a heaping tablespoon of the mixture and form into flattened croquettes.
  • Cook either in the oven, air fryer or in oil on the stove until crispy. I cook in olive oil for about 3 to 4 minutes per side or until crispy. Place on paper towels and enjoy.
  • For the dip mix all the ingredients, if you want it spicy add hot paprika to taste and serve with the croquettes.
