Ojiya or Japanese vegetable soup

This recipe is inspired by the classic ojiya soup or Japanese soup that is made with rice and is the comfort food for when you are sick or need something to warm you up.

To use oats, I swapped the cooked rice for steel cut oats which are thicker and give a more soup-like texture. It is a version that you can adapt to what you have at home and even add more vegetables, this is a simple and quick way to make it with the ingredients that I get in my country.
